Festive Dinner Menu "Winter Boyar Feast"

210

Winter feasts in Old Russia were always distinguished by their grandeur, merchant-like generosity and genuine warmth of heart. When frost crackled outside the windows and snowstorms buried settlements beneath the snow, the stoves in the boyars’ splendid mansions were heated until they glowed, and oak tables were laid, groaning under the weight of delicacies. Winter hospitality called for special, nourishing dishes to warm guests after a long journey: game from the deep taiga forests, the bounty of the rivers, hearty broths and hot homemade pastries were brought to the table. The host’s foremost principle was to treat guests so that everyone could experience the true generosity of the Slavic spirit. Restaurant Troika invites you to revive these centuries-old traditions and enjoy the atmosphere of an authentic boyar feast, where every dish is prepared according to old recipes and served with our signature hospitality. First, cold and hot appetisers are brought to the table Salads and cold appetisers: "Rosolje" salad with Baltic herring Old Russian "Olivier" salad with tender chicken fillet An abundant selection of meats from the boyars’ cellar (ham rolls, tongue, chicken roulade, duck, pork fat) with mustard and horseradish The fish catch of Slavic merchants (butterfish fillet, lightly salted salmon, trout roe, sprats, herring) Homemade preserves from our cellar (eggplant caviar, pickles and marinated vegetables) Hot appetisers: Hunter’s dumplings with reindeer meat in a clay pot with rich broth Traditional sauerkraut pie Main courses and side dishes: Oven-braised royal reindeer in the peasant style Royal salmon fillet baked beneath a golden crust Choice of side dishes: oven-roasted golden-brown potatoes, buckwheat porridge with fried bacon and onions, mushroom sauce To finish the dinner: A cosy homemade tea gathering brings the hearty meal to an end. Aromatic tea with honey and jam awaits you, bagels, sweets and a selection of fresh fruit. Price per festive place setting: EUR 62.90 Drinks included in the price: lemon water with ice (on the tables throughout the evening). Tea is served with dessert.
